This is a classic example of a washed Mexican Coffee, perfect for any brew method! Flavors of Raspberry, candied orange peel and cocoa were present on the cupping table, but a lot more peppery characteristics come out as a pourover, and the Raspberry and cocoa more dominant on espresso. A true crowd pleaser.

The Story

A proud partnership between Huatusco smallholder farmer, Covoya, and Coffeebar.

Huatusco is the perfect region to grow coffee thanks to its abundant rainfall. Processing coffee in Huatusco is slightly more complicated than in other Mexican regions during coffee harvest season due to the rainy days and very cold nights (which delay the fermentation process). Rainy conditions also mean a lot of coffee is mechanically dried. The majority of producers include small farmers of 1 hectares and medium farmers of 18 hectares.
