The Story
Ija’tz is a cooperative on the shores of Lake Atitlan, in the small town of San Lucas Toliman. The cooperative runs a processing mill and purchases harvested cherry from member producers at a price consistently above that of the street market. This coffee has been a component of our Feliz Holiday Blend for several years now, but this is its first appearance as a single origin offering. The name comes from the Tz’utujil language, a Mayan language spoken around Lake Atitlan, and means ‘seed.’
