The Story
A proud partnership between Atlantic Specialty, Puma Coffee, and Coffeebar.
The lot was processed by Manuel Rosales, the owner of Puma Coffee, whose farm is in the municipality of Mosonte, Nueva Segovia. This lot was processed when the coffee cherries were at their optimal ripeness, with a natural and prolonged fermentation of 36 hours. It has flavors of ripe fruits, honey, brown sugar, and citric acidity, resulting in a very balanced coffee. The farm is situated at an altitude between 1,400 to 1,500 meters above sea level.
Puma Coffee, S.A. is a company dedicated to the production and sourcing of specialty coffee. We work with a group of at least 30 producers located in the municipalities of Macuelizo, Dipilto, Mozonte, San Fernando, and Jalapa. The farms are located in the Dipilto and Jalapa mountain range, at altitudes ranging from 1,200 to 1,750 meters above sea level. Most producers cultivate Arabica varieties, including Caturra, Bourbon, Catuai, Pacamara, Maracaturra, as well as small quantities of exotic varieties such as Geisha, Java, SL28, SL34, among others.
